I loved this because I can pretty much just dump this in in the AM, and let it cook for 20 minutes while I go about my morning routine! This is also gluten free, low carb & keto friendly.
Crushed Red Pepper
Pink Himalayan Salt (or reg salt, but I prefer the healthiest salt choice!)
Grated Parmesan Cheese
In a cast iron skillet or casserole dish, spread no more than 1 tbs. of olive oil in the bottom of the pan.
Dump 1.5 cups of spinach on top of the oil. Sprinkle with crushed red pepper and garlic powder. Drizzle with a littttttle bit of olive oil. Crack 2-3 eggs on top of spinach. Sprinkle pink Himalayan salt + some pepper+grated Parmesan cheese. Bake for 20 minutes.
Feeding a whole family? Easy peasy. Add more spinach & eggs for more people!
And don't let it sit in the pan for an extra 10 minutes while the oven was off like I did this morning ...or else you'll end up eating a dried up version of this lol... even then, though, it still was delicious!!
