Y'all THIS RECIPE. I seriously cannot get over how AMAZINGGGG it is. I love breakfast foods and bread like it's nobody's business. So for me, these are so AWESOME. These kinds of recipes take some planning, so meal planning is definitely a must! But this would be great for a Saturday or Sunday morning, and kids will LOVE these! They are from the "No Excuses Detox" Cook Book- LOVE this cook book. Everything in here is to help detox your body- in a way that you can eat everyday, not a gimmicky 2 weeks cleanse. Choosing a healthy lifestyle everyday that lends itself to optimal gut health is KEY to overall health and weight loss. Make small changes over time, just one recipe a day will help you acclimate this into a lifestyle.
We made slight adjustments as we had no gluten free oat flour, so we used almond flour instead! You should be able to easily find almond flour at your local health food store. While these ingredients seem costly, it's your initial purchase of 'all the healthy foods' at once that will be a heavier cost. These waffles will break down to a cost of about $1/waffle!
These are also, dairy free, egg free, gluten free, nut free, soy free, vegan and keto! And no, not flavor free! They're amazing! I'm definitely not a chef, so these were super easy to make! You jus need a waffle iron. Time saver- go a head and make extra to freeze!
Creates about 2-3 Belgian waffles or 4-5 regular ssize waffles
¼ cup coconut oil, melted
olive oil cooking spray 2 cups almond flour 1¾ cups water 1 cup mashed sweet potato 2 teaspoons ground cinnamon ¼ cup maple syrup ½ teaspoon fine sea salt 1 teaspoon baking soda 1 tablespoon raw apple cider vinegar 2 Teaspoon Flax Seeds 2 Tablespoon of psyllium husks
Mix all the ingredients in a medium size bowl.
Heat up waffle iron, spray with olive oil spray. For a regular size waffle maker, use about 3/4 of the mixture for each waffle. For Belgian waffles you will need more.
Cook waffles to manufacturer’s instructions. Don’t be surprised if these steam a bit! They also could take a bit longer, just cook until crispy like a waffle!
