Healthy Pumpkin Bread. Clean Eating for Gut Health.

I’ve been cooking my way through the ‘No Excuses Detox’ Cookbook. In an effort to find gut healthy recipes, that are of course tasty, but are also mama friendly. This bread is super simple, super delicious and kids will love it!! These recipes are also cost effective! Give this one a try and tell me how delicious it is!!
1½ cups gluten-free oat flour (super simple! Get whole oats and blend those puppies into a fine powder!)
1 cup pumpkin puree
1 cup coconut sugar
1 tablespoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cloves
¼ cup coconut oil melted
1 teaspoon vanilla extract
1 teaspoon baking soda
¼ teaspoon fine sea salt
1 tablespoon raw apple cider vinegar
Preheat the oven to 350°F and line a standard loaf pan with parchment paper.
In a large mixing bowl, combine the flour, pumpkin puree, coconut sugar, cinnamon, ginger, cloves, coconut oil, vanilla, baking soda, and salt and stir well to combine. Add the vinegar, and stir quickly to make sure it’s fully incorporated.
Transfer the batter to the prepared loaf pan and use a spatula to spread it evenly into the bottom of the pan and smooth the top.
Bake until the center of the loaf is beginning to crack and feels firm to the touch, about 45 minutes.
Allow to cool completely before removing from the pan and cutting.
voila enjoy!! Also, you can also freeze this, but it’ll be eaten up before you have the chance to do that ;)
